Today’s dish is a very simple and fast meal too.
If you can find the vegetables ready cut, that saves you even more time.
So you will need a pack of skinless chicken breasts, some vegetables (Spinach, peppers, carrots, celery, mushrooms, corn, peas, onions, garlic, cabbage) Anything you fancy really. Slice up the chicken breasts and brown in a pan.
Take the chicken out of the pan and brown the mushrooms.
Once that is done add the vegetables, usually one (type) at a time. In order of thickness or cooking time. To reduce the cooking time, put the vegetables in the microwave for about 2 minutes just to soften. Our microwave has a fantastic function that you press a button once for fresh vegetables and the microwave takes care of the rest.
Add everything into the pan and while frying lightly you can make the noodles. For a very quick dinner in a hurry, I usually will use 2 minute noodles and they do just the job.
Put it all together, add some soy sauce, some lemon juice and again, anything you like. And there you go.
