A deliciously decadent, simple yet rewarding meal to satisfy even the fussiest, and hungriest of taste buds – every time!
I have posted about this being one of my favorite dishes before and it really doesnt even require a recipe.

Chicken is quite a staple in so many households and it can be challenging when trying to come up with something new, something different – as well as something that is quick and easy. For many people I know, the reason they dont cook very much is because of the lack of time they have to do it which I where I come in.
I have a full time job, plus a part time job of holding down the fort with this blog – as well as volunteering for DARG sometimes on weekends, and now the Caspian Alexander trust too (putting some of my techie skills to use)
During the week I dont have hours to spend in the kitchen as I am sure you dont either?
Let me help you out.
In a large baking tray throw together:
Chicken pieces (you know how many to feed each person – I work on roughly 2 per person depending on preferences)
Baby potatos (As above) Cut in half
Red Onions cut into 1/8
Carrots (as they are, unpeeled, cut)
Whole garlic cloves with the skin on
Lemons
Rosemary
Then a little olive oil and some chicken spice (or use whatever makes your heart tickle)
Some vegetable or chicken stock, and some wine to cover
I place it in tin foil for the first 30 -45 mins then remove (So that the steam cooks everything a little faster)
Then keep checking on it, untiol the juice of the chicken runs clear and this means it is cooked.
