
I do make chicken burgers often, but after going to De Kelder every Monday night for their 50% off burgers – I thought I should step up my game a little, especially if I wanted to impress the boys. The photos above are of the bacon and cheese burger which is our usual every Monday now.
Burgers are an affordable and easy supper to make, so budget – check, convenience – check!

First step is cut the chicken breasts in half length ways to make 8 thinner breasts and “marinate” them in a mixture of one egg, juice of 1/2 a lemon and garlic – and what ever seasoning tempts your taste buds. Leave it in that mixture while you are busy with everything else.

The sauce is another one of my favorites because the more you make it, the easier it becomes and it is so versatile too. Start with some butter and melt it in a pot and add about the same amount of flour until it is a paste consistency – that is called a roux.

Add a combination of milk and chicken stock little by little and keep stirring to keep the consistency and avoid the sauce being lumpy. Take it off the heat and add grated cheese and stir it in until melted. Add seasoning to taste – salt, pepper, mustard powder, popcorn seasoning (I used cheese and onion last night)

The chicken can now be tossed in bread crumbs and coated well and then placed on a medium heat frying pan until golden. If you are worried about the chicken being dry or uncooked then you can place them in the microwave for 1 minute and not have to worry.

Once the chicken is cooked and rolls are cut, its as easy as assembling the burgers. Crispy rolls, soft rolls, hamburger rolls, hot dog rolls – experiment, play around
That’s what I do.
This time I did buy crispy rolls which were tasty but I think next time I will go for soft rolls slightly toasted in the oven just before serving.

Flour, Eggs, Butter, Milk – Items to always have in the kitchen
Cheese – From last nights macaroni
Rolls – R10.40 for 8 rolls
Lemons – R5.27 for 2
Bread crumbs – R8.99 for 500g (You need 250g or less)
Chicken breasts – Range from R16 to R20 depending on the size you want
And I always try to keep as much salad and vegetables as I can in the fridge but this was accounted for in the macaroni for the previous night.



Far cheaper than any restaurant, and even if I say so myself.. Almost as good
