I was rather surprised I had time to cook this weekend, with packing and moving in 2 days so my weekend did seem to disappear but it was definitely all worth it, for having a kitchen like this one

If you remember from last week, Pick N Pay is having an “Eat pray love Cook off” I am not sure if you are allowed multiple entries but figured these dishes are great inspiration for meals so I will make then anyway. How can I not want to cook in a kitchen like that?

Now unfortunately my camera was not being on its best behavior, and I am not the worlds best photographer either, so please excuse some of the images. I can promise you the look of the photos, had nothing to do with the taste – it was yummy!

I started off by browning the potatoes, then the brinjals, and then the chicken – separately if you want to brown them, although you can throw everything in together to save some time.
Brown the onions and the carrots, add the potatos, chicken and brinjals.
I only had breyani spice left over, and I was waiting on the boys to bring the rest of my spices, so it wasn’t a very rich curry, but filled the gap!

I also didn’t have any chicken stock, so used beef stock with about 1L of water – just judge on how many ingredients you have. Pour in the curry spice and some coconut, or coconut milk instead of some of the water.

Cook it down for a while on simmer, and once everything has cooked you can take it off the heat and add plain yoghurt. Again as with all of the cooking I do, so many things can be changed and suited to your needs and taste buds.

The chicken and brinjal curry in a hurry can be served with some more plain yoghurt as well as a sambal made from onions, tomatoes, chillies, cucumber and served with coconut on top. The portions above, worked out at less than R10 each, for 5 people.
