Simple Supper – Roasted chicken, potato and butternut tray bake.

One of the easiest and most simple meals just has to be an oven tray bake.. A few ingredients, throw them together in a tray and bake.

The great thing is that you can also use a few ‘left overs’ from your fridge.
I bought chicken pieces for tonight, and the rest is from what I bought in the last week or two and needed to be used up.

Score the chicken pieces and cut the veg into relatively even sizes – cooking is an art and not always mathematics or science!

I like to use a spice that I mix up which has flavours of garlic, lemon and Bbq, a little olive oil, and some white wine for good measue ;-)

If you want a slow cooked, easy evening kind of dinner – put it in the oven at about 120 to 150 degrees and, well, wait until it is done.. (Chicken is cooked when the juices run clear once cut) for something a little quicker – cook at 180 but check it more often, once its browned nicely, if it isn’t cooked, put in the microwave for a few minutes and return to then oven for a few minutes.

One of my simple suppers – prep then cook slow food and enjoy your evening and glass of wine :-)
