Simple Supper – Roasted chicken, potato and butternut tray bake.

One of the easiest and most simple meals just has to be an oven tray bake.. A few ingredients, throw them together in a tray and bake.

The great thing is that you can also use a few ‘left overs’ from your fridge.
I bought chicken pieces for tonight, and the rest is from what I bought in the last week or two and needed to be used up.

Score the chicken pieces and cut the veg into relatively even sizes – cooking is an art and not always mathematics or science!

I like to use a spice that I mix up which has flavours of garlic, lemon and Bbq, a little olive oil, and some white wine for good measue ;-)

If you want a slow cooked, easy evening kind of dinner – put it in the oven at about 120 to 150 degrees and, well, wait until it is done.. (Chicken is cooked when the juices run clear once cut) for something a little quicker – cook at 180 but check it more often, once its browned nicely, if it isn’t cooked, put in the microwave for a few minutes and return to then oven for a few minutes.

Simple snack – Gorgonzola with Baobab and Apple Jam from Oded’s Kitchen

Now if you don’t know this already, I love the food markets, and working at plenty of them means one thing in particular – market food.
Now back to the budget issue, sometimes when I can’t buy food, the lovely traders don’t mind me ‘tasting’ their products, because they know this means a) I love and support their products, and b) when I can afford to, I support them in buying the products that I love.

I do seem to find new weaknesses often, and lately one of them has been gorgonzola.

My father and I have always had very similar tastes, and love similar things- like olives, matured cheeses, licorice so blue cheese or gorgonzola are nothing new to me.

Learning about the differences in texture and taste though, is something new. As is the new Baobab and apple jam – from Oded’s Kitchen.

Now of course, in order to sell a product, you have to know the products well enough, and if you don’t have a love for it, or at least a soft spot, then your sales won’t exactly be anything special.

So yes, I may always be tweeting about Oded’s Kitchens products and blogging when I can, but that is honestly just a love for all of the products, not because I am in any way paid for it! *swear :-)

So one of our newest members of the family, the Baobab and Apple jam! Sugar content is 33% instead of 45-55% which makes it an absolutely ideal partner to a creamy Gorgonzola. Add some bread or crackers, and voila – your snack is ready for consumption, and don’t say I didn’t warn you, it may spark up a new addiction ;-)

Budget Macaroni and cheese – whats in your cupboard?

When there really is too much month for your money, what else can one do but use up what you have and try to make it still as tasty as possible.

My dad and I have always had a good relationship, when I don’t live at home, any way.
So now that I really do have to watch costs so much more than before, my dad is getting regular visits from me, not only to do my washing there- but also to help him in, clearing his fridge of a few things before he does more grocery shopping.

So most of what I am using lately, is either what I can forage for at Dad’s, or ingredients that cost as little as possible..

But if you still have to buy these ingredients and don’t have have them lying around:
Cook 250g pasta (macaroni) in boiling water with one stock cube ( chicken, veg, beef) whatever you have or prefer. Melt about 2 tablespoons of butter and add about the same amount of flour to make a roux. Put about half a cup of the water from the pasta aside and add milk to fill the cup. Add the milky stock to the cooked flour and butter- off the heat and only a little at a time ( this prevents lumps) untill the sauce coats the back of the spoon.. Not too thick and not too thin ;-)

Add grated cheese, I also had some of Robertsons Basil Paste so added a nice heapen teaspoon. Season with salt, pepper or whatever spices you have in that cupboard.
I don’t think I need to tell you to put it all together in an oven dish, and cover it with more grated cheese.. But I guess I did just tell you that, did’nt I?

Now, you can add anything you want. Bacon, mince, chicken, veggies, onion, tuna – experiment.. Different ingredients or even different pasta’s. After all – it is all really about the sauce isn’t it?

Beautiful Bunnies – My love of animals, and my pet rabbits!

Some people have dogs or cats for pets, some people even horses or goats. If I could have all of them and live somewhere on a big plot of land away from the hustle and bustle of the city – and be completely self sufficient,well that’s another story for another day.

But for now, I am living in the city and don’t have masses of land, but I do have enough of a garden for my two rabbits.

Meet Thumper, and Rodger. The love I have for rabbits was definitely one at first sight. Besides being such interesting animals, they can also be very affectionate – and very cheap to look after and feed too!

As much as my life is inspired by food, there are other things that keep me happy – life, love, laughter too.

Pita bread filled with roast chicken and creamy salad – 15 minute meal


A simple supper that also falls into the budget category. To save time and effort you can get a ready roasted chicken from Pick n Pay for around R33 or pay the same price for a bigger chicken and roast it yourself. Pita breads R16 for 6 and salad with a dressing made of mayonnaise and your favourite salad dressing. Toast the pita’s, shred the chicken apart and fill the pita bread. Eat until your heart is content, and your tummy too!
